Carillon Brewing Co featuring Dayton Barbecue Company Soft Opening
January 22, 2025 Brady Kress (President and CEO of Dayton History) and Eric Evans announced a collaboration between Carillon Brewing Co. and Dayton Barbecue Company.
Carillon Brewing Co. is the nation's only full-production brewery in a museum and the only U.S. brewery replicating the historic brewing process. Ours is a story of a developing Midwestern city in a growing nation. It’s a tale that spans agriculture, industry, science, immigration, civilization, progress, culture and more.
Dayton Barbecue Company customers can expect favorites such as pulled pork and brisket meat platters, smoked fried wings, salads and the “Smoked Stack,” a double patty burger with brisket, pulled pork, house made pickles and red onions. Their plans also include serving locally made sausages on Dorothy Lane Market buns. All sauces and dressings will be made from scratch.
