A fresh new concept featuring an Italian chef is now open at the historic Dayton Arcade.
Est! Est!! Est!!!, at the corner of Fourth and Ludlow Streets, is an extension of Mayfair Hospitality’s flagship restaurant in downtown Winston-Salem, North Carolina which has been in operation since early 2022.
The dining space features an intimate feel with authentic Italian food and an extensive wine selection, as well as exterior and interior patio dining.
Est! Est!! Est!!! serves an array of appetizers, brick oven pizzas, handmade pasta, gelato, and other authentic Italian dishes. Keep scrolling for photos.

Est! Est!! Est!!! is led by Chef Simone Conosciani of Rome, Italy.
“Being Italian, it has been a life-long dream of mine to bring authentic Italian cuisine to the United States. Living in the United States has given me nothing but further inspiration for all types of cuisine from around the world. The pure expression of culture through food, in my opinion, is magical”, said Chef Conosciani.
According to their website, the name "Est Est Est" comes from the story of a German Bishop who sent his servant ahead to taste the wines along his route of travel, leaving messages on the walls of inns and taverns to tell his master whether he should drink the wine or avoid it. "Est" (it is) meant the wine was good, while "Non est" (it isn't) told the Bishop to move on. It is clear that the servant saw considerable virtue in the wines of Montefiascone, as indicated by his "Est! Est! Est!!! scrawled on the wall.
Lunch is served Monday to Saturday from 11:30 a.m. to 2 p.m., followed by a “Tapas Hour” from 2 p.m. to 5 p.m. Dinner is served Monday to Thursday from 5 p.m. to 9 p.m. and 5 p.m. to 10 p.m. on Friday and Saturday. Brunch is served Sundays from noon to 4 p.m. View menus here.
