Course 1: Four Blue Point Oysters to share served on a half shell and garnished with a shallot and cilantro citronette.
Suggested wine pairing: Pascual Toso Reserve Brut, Argentina – 100% Chardonnay sparkling wine offers delicious orchard fruit aromas and flavors. $8 glass, $33 bottle
Course 2: Two U-10 seared scallops in a bed of mirasol and amarillo Peruvian peppers with pisco sauce served with macedoine potatoes and an arugula & queso fresco salad.
Suggested wine pairing: Robert Weil Traditional Riesling, Germany – Bright acidity and light sweetness, just enough to enhance the wine’s fine fruitiness. $11 glass, $40 bottle
Course 3: A shared plate of two 7 oz. marinated and grilled filet mignon served with truffled mashed potatoes and stuffed piquillo peppers with quinoa, fine herbs and baked goat cheese.
Suggested wine pairing: Decoy Cabernet, California – Rich and concentrated with abundant dark berry flavors as well as savory black olive, earth and spice notes. $12.5 glass, $49 bottle
Course 4: French semi-sweet chocolate quenelles on a bed of fresh raspberries coulis.
